Cauliflower fried rice

Although rice and other cereals aren’t considered keto-friendly, cauliflower can work as an amazing substitute. Cauliflower grated into rice-like bits behave and taste just like regular rice. Anyone craving for Chinese whilst on their keto diet can definitely try the low-carb cauliflower fried rice to soothe your tastebuds!


1 medium to large cauliflower head (rinsed and ready to cook)

2 large eggs

½ onion, diced

1-2 garlic cloves, minced

1 tbsp freshly chopped ginger

½ cup frozen peas, corn, and carrot

½ cup chopped scallions

Salt to taste

2 tbsp olive oil

1tbsp sesame oil

1 tbsp soy sauce

1 tbsp chilli paste

½ cup chopped scallions



  1. Once the cauliflower has dried completely, break them into florets and grate them in a food process until they reach a rice-like consistency. Be careful not to over-process them as this might make your cauliflower rice mushy.
  2. Set aside your rice and heat olive oil over a large pan or wok on medium flame.
  3. Add the onion to the pan and stir until the onion turns translucent.
  4. Add the garlic, ginger, scallions, and frozen vegetables and continue cooking for 1-2 minutes.
  5. Add the riced cauliflower along with soy sauce and chilli paste. Stir well and cook for about 3 minutes.
  6. Push aside the rice and crack in the eggs.
  7. Once the eggs are cooked, stir the rice into the eggs and mix well.
  8. Season with freshly chopped scallion greens and sesame oil. Serve and enjoy!
