Cauliflower rice biryani

Keto biryani made with cauliflower rice is a low-carb version of the original aromatic and delicious chicken biryani. It is rich and divine with authentic Indian flavours and spices for a wholesome lunch or dinner meal.

Ingredients –

1.5 pounds chicken cut into 2-3 inch pieces

6 cups riced cauliflower

1 tsp garam masala

1 tsp ginger

1 tsp garlic

2 tsp Kashmiri red chilli powder

½ tsp ground turmeric

¼ cup fresh mint

1 tbsp lemon juice

2 tbsp yogurt

2.5 tsp salt

¼ cup ghee

1 onion, thinly sliced

1 tsp cumin seeds

1 bay leaf


Directions –

  1. Mix garam masala, ginger, garlic, chilli powder, turmeric, mint, lemon juice, yogurt, and salt in a bowl.
  2. Add in the chicken and mix well to coat the chicken.
  3. Set aside the marinated chicken for 20 minutes.
  4. Heat 2 tbsp of ghee in a pot over medium flame.
  5. Toss in the onions and sauté until they start to caramelize.
  6. Talk half the onions out and set aside.
  7. Add the remaining ghee along with with cumin seeds and bay leaf.
  8. Sauté for 1-2 minutes.
  9. Add in the chicken and mix well.
  10. Cover the pot and cook for 6-7 minutes to ensure the chicken is well-cooked.
  11. Add the riced cauliflower along with salt and mix well.
  12. Cook on medium heat for 8-10 minutes.
  13. Garnish the biryani with caramelised onions that were set aside.
  14. Serve and enjoy!
