Keto chicken satay

Chicken satay is an Asian dish popular among the south-east asian countries. It originated in Indonesia and consists of skewered chicken grilled and served with peanut sauce. A keto-friendly chicken satay has authentic flavours and the right amount of carbs for a yummy healthy dish.


1 pound boneless chicken breasts, cut into bite-size pieces

1 scallion, thinly sliced

½ cup coconut milk

3 tsp garlic, minced

½ tsp curry powder

½ tsp salt

½ tsp ground black pepper

½ tsp ground cayenne

¼ cup low-carb peanut butter

3 garlic cloves, minced

2 tbsp sesame oil

1 tbsp keto-approved oil

1 tbsp soy sauce

1 tbsp fresh lime juice


Directions –

  1. In a bowl, add in the coconut milk, 3 tsp minced garlic, curry powder, salt, black pepper, and cayenne and mix well.
  2. Toss in the chicken pieces and coat them well with the marinade.
  3. Cover and refrigerate overnight.
  4. Preheat the oven to 232 degrees C (450 degrees F)
  5. Thread 4 chicken chunks per skewer.
  6. Do remember to soak your wooden skewers in water for 30-60 minutes before use.
  7. Place the skewers in a single line on a lined baking sheet.
  8. Bake for 10 minutes.
  9. Flip the skewers and bake for an additional 10 minutes.
  10. Once the chicken is browned, remove them and set aside.
  11. You can also choose to grill the skewers.
  12. In a bowl, whisk together the peanut butter, minced garlic cloves, sesame oil, keto-approved oil, soy sauce, and lime juice .
  13. Heat in a saucepan over medium flame and whisk until smooth.
  14. Brush the sauce over the chicken and garnish with scallions.
  15. Serve with additional sauce on the side and enjoy!
