Keto fried chicken

This generation has seen a huge rise in the love for one’s all time favourites – KFC’s fried chicken. While KFC’s secret recipe remains hidden, a keto-friendly version of its fried chicken is definitely worth trying on your diet. It is a low-carb version of fried chicken that guarantees the crisp as well as juicy mouthwatering flavours to add to the treat.

Ingredients –

4 boneless chicken thighs (no-skin)

Avocado oil or any keto-friendly oil for frying

2 large eggs

2-3 tbsp heavy cream

2/3 cup blanched almond flour

2/3 cup grated Parmesan cheese

½ tsp salt

½ tsp black pepper

½ tsp smoked paprika

1 tsp garlic powder

½ tsp oregano

½ tsp thyme

½ tsp ground ginger

½ tsp ground cayenne (optional)

  1. Cut each chicken thigh into three even-sized pieces and set aside.
  2. Add the eggs and heavy cream in a bowl and whisk until the mixture turns a pale yellow colour.
  3. Take another bowl and add in the almond flour, cheese, salt, pepper, paprika, garlic powder, oregano, thyme, ginger, and cayenne. Mix well and ensure there are no clumps formed.
  4. Coat each piece of chicken in the dry ingredients bowl. Proceed to coat them in the egg bowl. Then, coat them again in the dry ingredients bowl. Coat the chicken thoroughly on all sides.
  5. Place your oil of choice to a pot and heat it to 359F. You can also use a deep fryer that comes with automatic temperature control.
  6. Fry the breaded chicken carefully until deep brown and perfectly cooked.
  7. Drain excess oil using paper towels.
  8. Serve and enjoy!
