Keto lava mug cake

Have you been craving for one of those mouthwatering chocolate lava cakes but realised you were on keto? That’s okay! It is actually very easy to make a low-carb keto-friendly version of a lava cake in a microwave! No preheating oven, no baking trays! This keto lava mug cake can be set and served in less than 20 minutes!

Ingredients –

2 tbsp cocoa powder

1-2 tbsp erythritol

1 medium egg

1 tbsp heavy cream

½ tsp vanilla extract

¼ tsp baking powder


Directions –

  1. In a bowl, mix the cocoa and erythritol and whisk well to get rid of any clumps.
  2. In another bowl, beat the egg until it turns a little fluffy.
  3. Add in the beaten egg along with the cream, vanilla extract, and baking powder to the cocoa-erythritol mixture.
  4. Spray in a little cooking oil to the mug and pour in the batter.
  5. Microwave the mug cake for 1 minute
  6. After one minute, check the cake and if it still hasn’t set properly, put it back in and microwave it for another 10 seconds.
  7. Repeat, if the cake still doesn’t bake.
  8. Alternatively, you can bake the cake in an oven too. For this, preheat the oven to 176 degrees C (350 degrees F)
  9. Make sure the mug that you use can be used safely in an oven (eg. Ceramic mug)
  10. Bake for 10-15 minutes.
  11. Remember to not overbake the cake!
  12. Serve and enjoy!
