Keto mac and cheese

Who says you can’t have the super delicious mac and cheese on a keto diet? Keto-friendly mac and cheese is made using cauliflower and cheddar cheese that gives a wholesome treat along with the tastiest substitute to the original mac and cheese.


1 cauliflower head broken into florets

¼ cup unsweetened milk of your choice

¼ cup softened cream cheese/ heavy cream

½ tsp Black pepper

Salt to taste

½ tsp Garlic powder

½ tsp Chilli powder

Dried herbs

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese



  1. Preheat the oven to 232 degrees C (450 degrees F)
  2. Boil the cauliflower florets in water and cook until tender. Drain the water and keep aside.
  3. You can also choose to fry or roast the cauliflower florets in butter and season them with salt and pepper for a crispier texture, instead of boiling them in water. 
  4. Add milk and cream cheese to a saucepan and whisk until the mixture melts.
  5. Stir in the garlic powder, chilli powder, and dried herbs.
  6. Whisk in the shredded mozzarella and cheddar to form the creamy cheese sauce.
  7. Add in the cauliflower florets and stir it into the sauce.
  8. Transfer this mixture to a baking dish and bake uncovered for 15-20 minutes.
  9. Feel free to garnish the keto-friendly mac and cheese with some crispy bacon and parsley to add on to the mouthwatering flavour.
  10. Serve and enjoy!
