Keto shepherd’s pie

Shepherd’s pie is usually made with lamb. However, it can also be substituted with beef or chicken if you happen to be on a tighter budget. Keto shepherd’s pie uses cauliflower mash and loads of deliciously melted cheese for the best flavour staying true to a strict keto diet.

Ingredients-

2 pounds ground beef or lamb

1 cup beef stock or lamb stock

1 large cauliflower head, florets

3 tbsp keto-approved oil (olive oil, recommended)

3 punches butter

4 ounces grated cheese (cheddar, recommended)

2 garlic cloves, crushed

1 onion, diced

3 celery sticks, diced

3 tbsp tomato paste

¼ cup red wine vinegar

1.5 tsp salt

1-2 tbsp of dried oregano

¼ tsp pepper

¼ tsp paprika

2 tbsp of fresh thyme leaves

 

Directions-

  1. Preheat the oven to 175 degrees C (350 degrees F)
  2. Heat oil on a pan over high flame.
  3. Add in the garlic, onion, celery, and oregano.
  4. Sauté for 4-5 minutes until fragrant.
  5. Add in the ground beef or lamb along with 1 tsp salt.
  6. Break apart the meat while it turns brown.
  7. Once the meat has browned, add in the tomato paste and stir well.
  8. Pour in the beef or lamb stock along with the vinegar.
  9. Simmer for 15-20 minutes until the liquid reduces.
  10. Add in the thyme and cook for be 5 minutes.
  11. Remove the mixture into a casserole dish and set aside.
  12. Add some water to boil and add the cauliflower florets to it.
  13. Cook for 10 minutes until the florets are tender.
  14. Drain the water well.
  15. Toss in the tender florets to a saucepan, along with butter, salt, and pepper.
  16. Use a stick blender and blend the cauliflower to a smooth mash.
  17. You can also use a food processor or a blender to make the cauliflower mash.
  18. Spread the cauliflower mash over the beef or lamb mixture in your casserole dish.
  19. Sprinkle cheese on the top.
  20. Bake for 25-30 minutes until the cheese melts.
  21. Broil for 3-4 minutes on high to turn the cheese golden brown.
  22. Serve and enjoy!
