Low-carb creamy coleslaw

Coleslaw is basically a cabbage salad made with mayonnaise and creamed to perfection. It is eaten as a side with various other dishes. A keto-friendly low-carb coleslaw has almost similar ingredients to that of a traditional coleslaw and can be prepared in less than 10 minutes!

Ingredients-

4 cups cabbage mixed with small carrot pieces (coleslaw mix)

½ cup low-carb mayonnaise

¼ cup low-carb sour cream

¼ cup heavy cream

1 tbsp powdered erythritol

2 tbsp lemon juice

2 tbsp apple cider vinegar

½ tsp dijon mustard (optional)

¼ tsp celery salt (optional)

¼ tsp salt

¼ tsp ground black pepper

 

Directions –

  1. Add all the ingredients except the cabbage mixed with carrots, in a bowl.
  2. Whisk well.
  3. Add in the cabbage mix to a large bowl.
  4. Pour the prepared dressing in the cabbage mix.
  5. Toss well to combine.
  6. Refrigerate the coleslaw overnight for the best flavours.
  7. Stir before serving.
  8. Serve and enjoy!
