Low-carb Spanish baked eggs

Low-carb baked eggs for breakfast are an absolutely delightful and healthy way to start off with your daily routine. They’re delicious, filling and flavoursome to the taste buds prepared with yummy eggs and melted creamy cheese.

Ingredients –

1 egg

¼ cup turkey bacon, diced

1/6 cup grated cheese

½ tbsp keto-friendly oil

½ tomato, diced

½ onion, chopped

1/6 cup bell peppers, roasted and cut into strips

1/8 tsp ground cumin

¼ tsp smoked paprika

½ tsp parsley, chopped

Salt and pepper

 

Directions –

  1. Preheat the oven to 200 degrees C (390 degrees F)
  2. Heat oil in a pan over medium flame.
  3. Add in the turkey bacon, paprika, cumin and sauté until the bacon is cooked.
  4. Add in the tomatoes and cook until they’re soft.
  5. Toss in the bell peppers, salt, pepper and mix well.
  6. Pour this mixture into a baking dish.
  7. Make a whole in the center of the mixture and crack in the egg.
  8. Sprinkle cheese and parsley on the top.
  9. Bake for 5-10 minutes until the egg is cooked and the cheese has melted.
  10. Serve and enjoy!
