Low-carb Thai green curry chicken

Thai green curry is a delicious Thai dish enjoyed by people all over the world. A keto twist to it is as amazing and is filled with rich flavours for a wonderful dinner meal.

Ingredients –

700g chicken thighs or breasts, cut into bite-size pieces

2 tbsp keto Thai green curry paste

1 tbsp keto-friendly oil

1 garlic clove

1.75 cup coconut milk

½ cup chicken stock

2 lemongrass stalks, chopped

150g beansprouts

1 tsp fish sauce

1 cup fresh coriander

200g green beans



  1. Heat oil in a pan on medium flame and fry the chicken pieces until browned.
  2. Add in the lemongrass, garlic, and curry paste and fry for a couple more minutes.
  3. Pour in the coconut milk, chicken stock, and fish sauce.
  4. Turn down the heat and cover the pan.
  5. Simmer for 8-10 minutes.
  6. Add in the beans and cook for 2-3 minutes.
  7. Toss in the beansprouts and stir for 1 minute.
  8. Garnish with coriander leaves. Serve and enjoy!
