Low-carb vegetable soup

A low-carb keto friendly vegetable soup is all that one will ever need to feel satisfied and full of energy throughout the day. A vegetable soup with a keto twist to it adds to the healthy wholesome nutrients in the veges and the luscious taste of the broth.

Ingredients –

1 tbsp butter

1 large onion, diced

2 bell peppers, diced

3 garlic cloves, minced

2 celery stalks, chopped

1 cauliflower head, cut into florets

2 cups fresh spinach

2 cups green beans, trimmed and cut into small pieces

1 can of diced tomatoes

8 cups chicken broth (or) beef broth (or) vegetable broth

1 tbsp italian seasoning

Salt and pepper

1 tbsp Worcestershire sauce (optional)


Directions –

  1. Heat and melt butter on a pot over medium flame.
  2. Add the onions, bell peppers, and celery and cook for 4 minutes.
  3. Add in the garlic and sauté till fragrant.
  4. Add the cauliflower, beans, tomatoes, broth, sauce, and seasonings and stir well.
  5. Bring to a simmer and cook until all the vegetables are tender.
  6. Season with salt and pepper.
  7. Add the spinach leaves to the pot and stir well.
  8. Cook for 2-3 minutes to ensure the spinach leaves are cooked well.
  9. Taste for any addition of seasonings.
  10. Serve and enjoy!
